Keto BLT on a Chive & Sour Cream Chaffle

If you’ve been following me for awhile, you know I’m a fan of easy, flavor packed foods. I’m also a fan of bacon, because everybody loves bacon.

It’s about that time I need to go food shopping, which means slim pickings for lunch. 

Chaffles are always a quick and easy solution. I tend to have cooked bacon in the fridge, so seemed like the perfect opportunity to make a BLT.

I decided to do a twist on the traditional chaffle by adding sour cream and chives to the “batter”. 

From start to finish – even if you need to make the bacon – it should only take you about 15 minutes! 

With only 5 net carbs, you can stay on your Keto and Low Carb plan while eating a killer meal.

Keto BLT on a Chive & Sour Cream Chaffle

Ingredients

  • Bacon, 3 slices cooked

  • 1 egg, beaten

  • 1/3 cup shredded mozzarella cheese

  • 1 Tb Sour Cream

  • 1 Tb Almond Flour

  • 1 Tb chives, chopped (or 2 tsp dried chives)

  • 2-3 Iceberg lettuce leaves

  • 2 Slices of tomato (or 4 cherry tomatoes, sliced if you’re like me and running low on ingredients!)

  • 1 Tb Mayo

Directions

  • Preheat your mini waffle maker
  • While waffle maker heats, mix together egg, cheese, almond flour, chives, and sour cream
  • Place half of the egg mixture on waffle maker and cook for 3-5 minutes or until fully cooked and starting to turn golden brown. Repeat with remaining batter.
  • Place bottom chaffle on plate. Layer with 1/2 mayo, bacon, lettuce, tomato, remaning mayo, and chaffle.
  • Gobble Up!
